Riviera Maya (April 11, 2011) – Now available from the latest and most sophisticated iteration of the ultra-luxury, all-inclusive resort experience in the Caribbean, Grand Velas Riviera Maya recently unveiled a new Sake Menu at its Asian-inspired Sen Lin restaurant. The restaurant, which finds an ideal balance between the most modern and ancient of Asian cuisine, offers both hot and cold sake – all made from fermented rice by hand. Flavors include cinnamon, vanilla, dried fruit, plum with ginger, the tra ditional anise as well as a creamy peanut and lemongrass.

Sake, commonly drank as part of spiritual rituals in Japan in small ceramic or glass cups, is the ideal accompaniment to a new selection of handmade Kogata No Kanki (petit fours), such as lychees filled with foam and gold leaf and Hazelnut truffle with ginger and coconut milk infusion with rice, that complement the diners’ culinary journey to the East.

Sen Lin is founded on the culinary traditions of northeast and southwest Asia including China, Japan, Korea, Vietnam, Malaysia, Cambodia and Thailand. At the helm of the restaurant is Chef Antonio Cortaza whose 12 years of culinary experience have taken him across Asia creating the foundation for his avant garde Asian cuisine that plays on new textures and original presentations with the traditional ingredients.

Aguas Frescas: A Mexican favorite with a new twist from Food Blogger Matt Armendariz

Food Blogger, photographer, cookbook author and food stylist Matt Armendariz shares his unique recipes for Aguas Frescas, a traditional refreshing drink found on nearly every street corner and in every restaurant in Mexico. Matt will soon be at Grand Velas Riviera Maya for Food Blogger’s Camp 2011. The camp will feature expert seminars lead by professional food bloggers and food photographers, culinary demonstrations, wine and tequila tastings, amazing food and more.

We have to agree with Matt, the Pineapple Ginger Agua Fresca is our favorite too!

Here’s Matt’s Recipe:

Ginger Simple Syrup3/4 cup sugar
3/4 cup water
3 pieces of fresh ginger cut into coins
Bring water and sugar to a boil and then add the pieces of ginger. Remove from heat and let cool completely. Strain and discard the ginger.

For the Drink:
4 cups fresh pineapple with 2-4 cups of water to blend
8-10 cups of water

Puree the fruit and water in batches and then strain to remove any seeds or pulp. You can use a fine sieve or cheesecloth and you’ll want to get as much solids out of the liquid. Add the simple syrup to the strained liquid and then dilute with 8 to 10 cups of water. At this point you can adjust the sugar and water levels to your liking. Serve over plenty of ice and enjoy immediately.

For more Aguas Frescas recipes visit http://mattbites.com/2009/02/23/aguas-frescas/ and learn more about Food Blogger’s Camp 2011 here: Grand Velas Riviera Maya for Food Blogger’s Camp 2011.

Among those featured was Cocina de Autor, the Grand Velas Riviera Maya restaurant by renowned chefs Mikel Alonso and Bruno Oteiza, who delight with their Basque-Mexican cuisine: an original form of blending classic flavors of the peninsula with traditional regional cuisine.

The list was based on the reviews of the magazine’s experts in the culinary arts, who not only took into account the flavor of each dish, but put quality, ambiance and excellent service to the test.

Congratulations to Cocina de Autor and Grand Velas Riviera Maya on this important recognition!
